Tasting Notes:
This Tall Horse Cab Sauv has a deep rich ruby colour with many layers of ripe forest berries and spicy aromas. A gentle smooth entry partnered with fruity berry flavours. Smooth vanilla oak notes and a smooth juice finish.

Viticulture:
Grapes were tracked from a variety of macroclimates ranging from warmer Southern slopes, basking in long
hours of sunlight to cooler pockets of vines where African Ocean breezes ensure ultimate expression of cultivar and land. Our Cape climate allows the vines to drink in the winter rainfall and ripen slowly in the warm summer season before harvesting in February at an average of 24˚C.

Winemaking:
Grapes are fermented on the skins for seven days at 28˚C with three aerations per day. After pressing, the young wine is put on French oak staves where malolactic fermentation is completed. The wine is left on the staves for a further 3 months. A very light filtration before bottling ensures the conservation of intrinsic cultivartraits.
